Ah Sunday, what a beautiful day. On Sunday we brunch and what better way to brunch than with delicious granola? Once every two weeks I make my own granola recipe and the whole kitchen smells amazing! And today I’ll share my wonder recipe with you! Are you too busy to make your own granola but still want to start your day healthy? Try the granola from Xavie, it’s absolutely de-li-ci-ous.
Ever since I started making granola myself thanks to the healthy (food)blog from sweet Ellen, I have been excited for breakfast every day. Not that I wasn’t a fan of breakfast before, it was just difficult to resist all temptations and to not get bored after eating the same breakfast for three days.
I always thought making granola was difficult and time-consuming and both are not true! I think granola is one of the easiest and fastest recipes out there. And you know what the very best part is? You can design the granola to your own liking! For example I started of with a recipe for a peanut butter chocolate chip granola (Ok, I know not super healthy but a girl has to start somewhere, right? ;-)). Since I wasn’t able to find chocolate chips anywhere (seriously, where do they sell this stuff?!) I decided to just go free style and make my own perfect granola blend. And let me tell you: the first time was already a hit! So here’s my own cocopeanutty granola recipe:
- 270g rolled oats
- 2 tablespoons coconut sugar (kokosbloesem)
- 50g melted coconut oil
- 65g creamy natural salted peanut butter
- 25g maple syrup
- coconut flakes
- a handful of mixed nuts (choose to your own liking)
Preheat your oven to 175 degrees. Melt the peanut butter, oil and sugar until it is liquid. Put all your other ingredients together in a large bowl and pour the mixture over it. Spread it out on a baking sheet and put it in the oven. Toss it around after 10 minutes and leave it for another 8-10 minutes. Take it out of the oven, let it cool off and there you have it already, your own delicious granola!
Not a fan of going to four different supermarkets to find all your healthy ingredients? I feel you sister, it’s a whole struggle and a woman has other priorities like shopping and sipping cava. So that’s why the lovely Xavie bakes you the most finger-licking good granola/granovie you can find without you even having to lift a finger. The only thing you have to do is pay her a little money (she also need to shop and sip cava of course!). I got to try some of her granola and my o my, I thought mine was good but hers is master class! I especially LOVE the one with cinnamon and coconut but all her flavours are amazing. You can already get a bag from €7 a piece so plenty of money enough for that second glass of cava!
