Healthy Sunday: Nasi goreng with chicken

Looking for a quick and delicious healthy meal? I got a dish that has all of these ingredients! I present you: homemade nasi goreng with chicken. That bikini body you are dreaming of is coming right up!

Ingredients:

  • 200 gr chicken
  • 200 gr basmati rice
  • 300 ml water
  • 1 onion
  • 3 carrots
  • 1 paprika
  • a piece of leek
  • clove of garlic
  • black pepper
  • turmeric
  • cumin

Preparation:

Boil the rice with the water in a rice cooker, for example the practical Tupperware rice cooker, in the microwave for 8 minutes at 600 watt. If you do not have a rice cooker you can also use a microwave resistant bowl. Stir the rice with a spoon and put it in for 10 more minutes at 360 watt.

Meanwhile cut the vegetables and chicken into tiny chops, start frying the onion and carrots, later on the leek, paprika and garlic until all vegetables are cooked. I always use coconut oil instead of butter since this option is much healthier.

Fry the chicken with typical chicken herbs or choose a mix of herbs to your own liking.

Put the rice, chicken and vegetables all together and flavor the dish with black pepper, turmeric and cumin. You can vary this dish by using other vegetables or by replacing the chicken with shrimps, turkey or pork.
